The diet is over ... and some Stuffed Peppers...

The cleanse thingy is OVER!

I lost 10 pounds.
IT was WORTH it!

We are still trying to eat healthy.


Stuffed Sweet Bell Peppers

Tonight we had stuffed peppers. YUMMY!

I make them with Sweet Bell Peppers instead of the standard green bell peppers. Reason: a sweeter less intense "bell" flavor. The children eat these up. This is my mom's recipe, deeply modified. :)

Stuffed Sweet Bell Peppers:

Prep = 40 minutes Cook time: 25-30 minutes Preheat 375 degrees

Ingredients:
6-8 Sweet Bell Peppers (Red, Yellow or Orange)
1 TBSP Extra Virgin Olive Oil
1/2 Cup chopped onion
1/2 Cup chopped carrot
1/2 Cup chopped celery
1 Can diced tomatoes
1 Can tomato sauce (I end up adding 2)
1 clove minced garlic
1/2 - 1 tsp leaf oregano
1/2 tsp leaf basil
salt/pepper to taste
1 1/2 tsp Worchestershire
1/4 Cup Sugar
3 -4 Cups cooked Brown Rice
1 1/2 lbs Ground Beef - browned
Shredded cheddar

Pre Cook brown rice (this takes 40 minutes). Brown ground beef and set aside.

Prepare bell peppers - remove tops, stems, seeds and membranes (leave pepper whole)
Rinse them. Drain and set aside.

In olive oil, brown onion, garlic, carrot and celery. Add Tomatoes, sauce and spices; simmering for 5-10 minutes. Add ground beef and rice until evenly mixed.

Stuff the peppers with rice mixture. Set in greased pyrex 9 x 9 or 9 x 12. Add extra rice mixture around the peppers and top lightly with cheddar.

Bake 30 minutes at 375 degrees. Serve with green vegetables or salad.
