French Toast Casserole and Triple Expresso Latte for our breakfast.
French Toast Casserole
1 Loaf French Bread (cut into 1 inch squares)
6 Eggs
1 1/2 Cup Milk
1/2 Cup Half and Half
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Topping = 1/4 cup margarine, 1 Tbsp. pure maple syrup, 1/2 cup brown sugar.
Butter a 9 x 13 glass baking dish. Arrange cut pieces of bread in bottom of pan. Combine eggs, milk, half and half, vanilla, cinnamon and nutmeg. Pour mixture over bread. Cover and refrigerate overnight.
Next morning: Preheat oven to 350 degrees. Prepare Topping: 1/4 Cup margarine (softened), 1 Tablespoon maple syrup, 1/2 Cup brown sugar. Spread mixture over the top. Bake 35-45 minutes or until golden brown.
I make this with almond milk, and today I used a sourdough loaf torn into pieces and since we were out of maple syrup, I substituted honey and it was a huge hit. All the boys had seconds. :)
We enjoy this dish on most holiday mornings. I make a Gluten Free version for Tall, simply by substituting GF bread or waffles cut into cubes. I usually only make a 1/2 recipe for her. :)
